Hey Liz, I think that one of the biggest disadvantages of metadata is that you must be fluent in the language used by each system. For instance, my library uses OCLC tags. If i want to do a subject search to find a travel guide for new Zealand, i have to type something that looks like "travel -- guides -- New Zealand," or it won't come out. An even broader view is that if you don't type in the right word, you might not get anything at all. Think about past searches when you knew the information was out there, maybe you even saw it before, but no matter what you typed in as your search parameters, you just couldn't find it again. That's the main (potential, not guaranteed) disadvantage of metadata, and what that Dublin Core Model is supposed to be helping fix.
I think another of the disadvantages of metadata is that it's such a relatively new field that there aren't really established methods or rules to go by. To my understanding, a lot of metadata librarians are literally inventing the terms and practices that they use as they go along because it's such a new field. I would imagine that being a metadata librarian means you're literally learning something new every single day and then applying it to your work.
